Ingredients

  • 1 box lasagna noodles, as directed on box
  • 4 cup instant mashed potatoes or homemade
  • 2 stick butter (may have to tweak at of how buttery you like, I like alot so I use 3 sticks)
  • 1 1/2 cup onion, chopped
  • 1 season salt to taste
  • 1 ground black pepper to taste
  • 2 packages shredded cheddar cheese
  • 1 tsp minced garlic (optional)

Directions

    Melt 1-1/2 sticks butter.

    Set aside.

    Boil noodles as directed, keeping noodles slightly al dente because will finish cooking off in oven.

    Set aside.

    Preheat oven 375 .

    In a small saute pan, saute onion until almost tender then add garlic.

    Cook for 5 more minutes.

    Set aside.

    Make mashed potatoes & mix in 1/2 stick butter, 1 package cheese, & onion mixture.

    Add some milk if potatoes too stiff.

    They should be creamy.

    In a greased 13x9in pan, start layering noodles, like a lasagna.

    Then spread potatoes mixture.

    Then1/4 some butter.

    Then 1/4 cheese.

    Repeat ending with last layer of noodles, then butter and cheese.

    Cover with foil & bake for 30-40 minutes.

    Then serve as a vegetarian meal or as side.
