- 2 Tbsp. oil
- 1 to 2 zucchini, sliced
- 1/3 c. chopped green pepper
- 2/3 c. sliced carrots
- 1 lb. fresh mushrooms, sliced or 1 (8 oz.) can sliced
- 1/3 c. sliced celery
- 1 c. fresh chopped broccoli
- 1 c. chopped cauliflower
- 1 small chopped onion (optional)
- 1 (16 oz.) can tomato sauce
- 1 small can tomato paste
- 1 c. water
- 1 tsp. dried oregano
- 1 tsp. basil
- 1/4 tsp. marjoram
- 1 clove garlic, crushed
- 1/4 tsp. salt
- 16 oz. Mozzarella cheese
Directions

1Saute vegetables for 7 minutes in hot oil.

2Add the following to the sauteed vegetables and simmer 20 minutes: tomato sauce, tomato paste, water, dried oregano, basil, marjoram, garlic and salt.

3Pour into 9 x 13-inch pan.

4Sprinkle with Mozzarella cheese.

5Place in 400° oven just to melt cheese while preparing batter.
