- 3 lg eggs- room temperature
- 1 1/2 cup whole milk- room temperature
- 1 1/2 cup flour
- 2 tblespoons butter, melted
- 1 teaspoon salt
- veg oil
- nutmeg to taste ( I like a lot)
Directions

1Process eggs and milk together in food processor. Add flour butter, salt, and nutmeg to taste. Process on high speed until batter is bubbly, about 1 minute. Cover and let batter rest at room temp for 30 minutes.

2While batter rests, add 1/2 teaspooon olive oil to each cup. Put oven rack on lowest position and place popover pan in oven. Preheat oven to 450. When oven is at temp, quickly remove pan and fill cups 1/2 to 2/3 full after spraying them with PAM. Place pan in oven and bake at 450 for 15 minutes. After 15 minutes, turn oven down to 350 and bake for 10 minutes more. Serve with butter.
