Ingredients

  • 2 lb. smoked sausage, sliced
  • 1 onion, chopped
  • 1 can rotel tomatoes
  • 3 cans tomato sauce
  • 2 cans red beans, drained
  • cajun seasoning
  • salt and pepper to taste
  • cooked rice

Directions

    Saute onions and sausage in 2 Tbsp. oil; drain.

    Add tomatoes, tomato sauce and seasoning.

    Cover and simmer for 30 minutes.

    Serve over rice.
