Poppy Seed Cake

  • 1 c. poppy seed
  • 1/3 c. honey
  • 1/4 c. water
  • 1 c. butter
  • 1 1/2 c. sugar
  • 4 eggs, separated
  • 1 c. sour cream
  • 1 tsp. vanilla
  • 2 1/2 c. sifted flour
  • 1 tsp. soda
  • 1 tsp. salt

    In a small saucepan, cook poppy seed with honey and water for 5 to 7 minutes.

    Cool.

    Cream butter and sugar until light and fluffy.

    Add cooled poppy seed mixture.

    Add egg yolks one at a time.

    Beat well after each addition.

    Blend in sour cream and vanilla.

    Sift together the flour, soda and salt.

    Gradually add to fruit mixture, beating well after each addition.

    Beat egg whites until they form stiff peaks and fold into batter.

    Pour into lightly greased and floured 9-inch tube pan.
