Poppyseed Cake

  • 3/4 cups Ground Poppy Seeds
  • 1/2 cups Boiling Water
  • 1 cup Oleo
  • 2 cups Sugar
  • 4 whole Eggs, Separated
  • 2-1/2 cups Sifted Flour
  • 1/2 teaspoons Salt
  • 1 teaspoon Baking Soda
  • 1 cup Buttermilk
  • 1 teaspoon Vanilla

Directions

    Soak ground poppy seeds in boiling water. In a separate bowl, cream together oleo and sugar. Add the egg yolks, one at a time, beating well after each addition. Sift together dry ingredients and add to the creamed mixture alternating with buttermilk. Add poppy seeds to this mixture.

    Beat egg whites until stiff peaks are formed. Fold into the cake mixture; add vanilla. Bake at 350°F for approximately 30 minutes.
