- 1 lb. pork loin, cut into strips (or use 8 link sausages, cut into chunks) about 1 lb.
- 1 medium cooking apple, diced
- 1 medium green pepper, cut into thin strips
- 2 scallions, sliced
- 2 Tbsp. margarine or butter
- 1 c. water
- 1/2 c. apple juice
- 2 Tbsp. soy sauce
- 1 Tbsp. vinegar
- 3 Tbsp. brown sugar
- 1/2 tsp. salt
- 1 1/2 c. original Minute Rice
Directions

1Cook and stir pork, apple, pepper and scallions in hot margarine in large skillet until browned.

2Add sugar, salt, water, apple juice, soy sauce and vinegar; bring to a boil.

3Reduce heat; cover and simmer for 10 minutes.

4Stir in rice; cover. Remove from heat; let stand 5 minutes.

5Makes 4 servings.
