- 1 1/2 lb. lean pork
- 1 small onion
- mixed herbs, salt and pepper to taste
- 2 boiled eggs, sliced
- pastry for top and bottom on (9-inch) pie plate
Directions

1Preheat oven to 375°.

2Cut pork into bite-size pieces; add chopped onion, salt and pepper.

3Cover with water.

4Simmer 2 hours.

5Drain (saving juices).

6Line pie plate; add meat and onion.

7Sprinkle with herbs.

8Lay slices of egg on top.

9Thicken juices by mixing with cornstarch and simmering 1 or 2 minutes. Pour over meat and egg in plate.

10Cover with pastry, seal edges well and slash middle to let steam escape.

11Bake for 30 minutes. Serves 6 to 8.
