Pork And Spinach Rolls

  • 1 lb boneless pork chops, pounded thin
  • 10.5 oz spinach
  • 3 None red peppers, roasted, cut into thick strips
  • 2 slices cheese, cut into strips
  • 1 tbsp oil
  • 2 tbsp honey
  • None None steamed baby potatoes and green beans, to serve

Directions

    Lay out pounded pork chops on a clean work surface. Arrange spinach, peppers and cheese over top. Roll up and tie with butcher's twine to secure.

    In a large frying pan, heat oil over medium heat. Cook pork rolls for 5 mins, until browned all over. Reduce heat, cover and cook for another 5 mins, until cooked through. Let rest in a warm place for 5 mins.

    Deglaze pan with 1/2 cup water, scraping up brown bits. Add honey and simmer for 2 mins. Drizzle over pork rolls. Serve with steamed potatoes and green beans.
