Ingredients

  • 1 1/2 lb. pork, cut into bite size strips or chunks
  • 2 Tbsp. oil
  • 1 (10 1/2 oz.) can onion soup (not cream of onion soup)
  • 2 1/4 c. water, divided
  • 1 tsp. lemon juice
  • 1 tsp. salt
  • 3 c. chopped cabbage
  • 1 c. thinly sliced carrots
  • 1/2 c. green pepper strips
  • 3 c. prepared barbecue sauce

Directions

    In a heavy Dutch oven or soup pot, lightly brown the pork in the oil.

    Add the onion soup, 1 1/4 cups water, lemon juice and salt.

    Simmer, covered, for about 15 to 20 minutes.

    Add cabbage, carrots, green pepper strips and barbecue sauce with additional 1 cup water.

    Cover and increase heat to medium.

    Continue cooking for about 15 minutes longer or until mixture is slightly thickened.
