  • 1 lb. lean pork shoulder, coarsely ground
  • 1/4 c. oil
  • 1 1/2 c. chopped onions
  • 3/4 c. chopped green pepper
  • 1 can tomato soup
  • 1 can (15 1/2 oz.) tomatoes
  • 1 can (4 oz.) mushrooms with liquid
  • 1 tsp. salt
  • dash of pepper
  • 1 pkg. (6 oz.) wide noodles
  • 3/4 c. bread crumbs
  • 1/2 c. melted butter
  • 1/2 c. grated Cheddar cheese

    Saute the meat in the oil.

    Add the chopped vegetables.

    Cook 10 minutes.

    Add the soup, mushrooms with liquid and the seasonings.

    Simmer 10 minutes.

    Cook noodles and drain.

    Mix noodles with the meat sauce and spread in a buttered 13 x 9-inch glass baking dish.

    Mix the bread crumbs with melted butter and grated cheese and spread over the top.

    Bake, uncovered, at 350° for 20 minutes.
