- 4 pork loin or rib chops, 1/2 to 3/4-inch thick
- salt and pepper
- 1 pkg. scalloped potatoes
- 2 Tbsp. chopped pimiento
Directions

1Trim excess fat from chops.

2Grease 10-inch skillet with fat. Brown chops on both sides; season with salt and pepper.

3Remove chops from skillet.

4Empty potatoes and seasoned sauce packet into skillet.

5Stir in pimiento and amounts of milk and water called for on package.

6Heat to boiling, stirring occasionally.

7Reduce heat; place pork chops on top.

8Cover and simmer 30 to 35 minutes or until potatoes are tender.
