Pork Enchiladas

- 1 tbsp olive oil
- 1 None red pepper, seeded and sliced
- 1 None onion, sliced
- 1 large green chili pepper, thinly sliced
- 2 cloves garlic, thinly sliced
- 2 cups chopped cooked pork
- 1 can (10 oz) enchilada sauce
- 8 None flour tortillas
- 1 cup grated Cheddar cheese
Directions

1Preheat the oven to 350°F. Lightly grease a 13 x 9-inch baking dish.

2Heat oil in a large skillet on medium heat. Saute pepper and onion 4-5 mins, until softened. Add chili pepper and garlic; cook 1 min. Add pork and 1/2 the enchilada sauce. Bring to a boil, stirring occasionally.

3Spoon equal amounts of filling down center of tortillas. Roll up to enclose. Place tortillas, seam side down, in prepared dish. Pour remaining sauce over top. Sprinkle with grated cheese.

4Bake 15-20 mins, until cheese melts and is bubbling.
