Pork Kidneys In Mushroom Sauce

- 1 3/4 lbs pork kidneys, trimmed
- 2 shallots
- 10 ounces white mushrooms
- 3/4 cup heavy cream
- 1/2 teaspoon paprika
- 2 tablespoons parsley
- salt and pepper
Directions

1Rinse and slice mushrooms.

2Peel shallot and finely chop both the shallot and parsley.

3Saute the shallots and kidneys in a frying pan over medium-high heat until they give off their liquid.

4Remove shallots and kidney and set aside.

5Saute the mushrooms over medium heat.

6Return the kidneys and shallots to the frying pan, add the cream, paprika and salt and reduce heat.

7Simmer for 3-5 minutes until sauce and kidneys are both hot.

8Season with pepper and sprinkle with chopped parsley.
