- 1 lb. pork medallions
- 2 tsp. vegetable oil
- 2 tsp. margarine
- 1/2 c. capers
- 1 Tbsp. flour
- 1/2 c. chicken broth
- 1 Tbsp. lemon juice
Directions

1Combine first 5 ingredients in a small bowl.

2Dredge pork in flour mixture.

3Coat a large skillet with oil.

4Add pork and cook 4 to 5 minutes on each side, until browned.
