- 4 pounds pork boneless, Boston should roast
- 1 teaspoon dried thyme
- 2 cups apple juice or cider
- 1 tablespoon cider vinegar
- potatoes 3 med., pared and quartered
- carrots 3 med., cut in 1/2 inch pieces
- 2 celery ribs, cut in 2 inch pieces
- onion 1 lg., cut in wedges
- apple 1 med., pared and cut in wedges
- salt
- pepper
Directions

1Sprinkle roast with thyme, place in 4-quart Dutch oven.

2Add apple juice and vinegar.

3Bring to boil.

4Cover, reduce heat and simmer for 1 1/2 hours.

5Add potatoes, carrots, celery and onion.

6Return to boiling, cover; reduce heat and simmer until roast and vegetables are tender, about 1 hour.

7Add apple wedges to roast during last 15 minutes of cooking time.
