- 1 lb. pork tenderloin, cut into thin strips
- 1 Tbsp. olive oil
- 1 zucchini, grated into coarse pieces
- 8 to 10 cherry tomatoes, halved and drained
- 1/2 c. dry white wine
- 2 c. fettucini, cooked
- 2 cloves garlic, minced
- 4 green onions, sliced
- 1/2 lb. fresh pea pods
- 1/2 tsp. oregano
- 1/4 c. grated Romano or Parmesan cheese
Directions

1In a large frypan, saute garlic and pork strips in oil until lightly browned.

2Add vegetables and seasonings.

3Simmer for a few minutes, stirring, until moisture is almost gone.

4Add wine and simmer to reduce liquid.

5Pour over fettucine.

6Toss all together with cheese.

7Serve immediately.
