  • 1 lb. pork tenderloin, cut into thin strips
  • 1 Tbsp. olive oil
  • 1 zucchini, grated into coarse pieces
  • 8 to 10 cherry tomatoes, halved and drained
  • 1/2 c. dry white wine
  • 2 c. fettucini, cooked
  • 2 cloves garlic, minced
  • 4 green onions, sliced
  • 1/2 lb. fresh pea pods
  • 1/2 tsp. oregano
  • 1/4 c. grated Romano or Parmesan cheese

Directions

    In a large frypan, saute garlic and pork strips in oil until lightly browned.

    Add vegetables and seasonings.

    Simmer for a few minutes, stirring, until moisture is almost gone.

    Add wine and simmer to reduce liquid.

    Pour over fettucine.

    Toss all together with cheese.
