Ingredients
- 1/2 c. Dijon mustard
- 2 Tbsp. soy sauce
- 1 Tbsp. olive oil
- 4 garlic cloves, minced
- 1 tsp dried thyme
- 1 boneless pork loin roast
- 1 tsp salt
- 1/4 tsp pepper
- 1 1/2 c. white wine
Directions

1In a small bowl combine mustard, soy sauce, oil, garlic and thyme.

2Rub over roast.

3Refrigerate, turning occasionally.

4Place roast on a rack in a shallow roasting pan.

5Sprinkle with salt and pepper.

6Pour wine into the pan.

7Bake uncovered at 325°F for about 2 1/2 hours, until meat thermometer reads 160°, basting with pan juices every 30 minutes.

8Before slicing let stand for 10 minutes.

9Serve over mashed potatoes with green lettuce.
