- 2 Tbsp. smooth peanut butter
- 2 Tbsp. ground coriander
- 1/8 tsp. cayenne
- 1/4 tsp. fresh ground pepper
- 1 clove garlic
- 2 Tbsp. chopped onion
- 1 tsp. salt
- 1 Tbsp. light brown sugar
- 3 Tbsp. soy sauce
- 3 Tbsp. lemon juice
- 1 1/2 lb. pork tenderloin

- yellow, red and green pepper
Directions

1Mix all ingredients (except pork).

2Cut tenderloin into cubes big enough to grill.

3Pour marinade over pork overnight.

4Skewer meat with onion and peppers.

5Cook on grill or in oven at 375° until brown throughout.
