Ingredients

  • 2 Tbsp. smooth peanut butter
  • 2 Tbsp. ground coriander
  • 1/8 tsp. cayenne
  • 1/4 tsp. fresh ground pepper
  • 1 clove garlic
  • 2 Tbsp. chopped onion
  • 1 tsp. salt
  • 1 Tbsp. light brown sugar
  • 3 Tbsp. soy sauce
  • 3 Tbsp. lemon juice
  • 1 1/2 lb. pork tenderloin
  • onion
  • yellow, red and green pepper

Directions

    Mix all ingredients (except pork).

    Cut tenderloin into cubes big enough to grill.

    Pour marinade over pork overnight.

    Skewer meat with onion and peppers.

    Cook on grill or in oven at 375° until brown throughout.
