- 4 pork loin chops (cutlets)
- 2 large oranges
- 1/4 tsp. pepper
- small amount flour
- small amount oil (for cooking)
- 1/2 c. onion, minced
- 1/2 c. chicken broth
- 1/2 c. orange juice
Directions

1Place meat between wax paper and pound.

2Grate the rind of 1 orange and remove remaining skin.

3Peel the 2nd orange; cut each in half and half again.

4Season the pork with pepper.

5Dip in flour and cook in skillet 4 or 5 minutes per side.

6Add onion, broth, grated rind and juice.

7Cover and simmer until tender.

8Add orange halves; heat and serve.

9Serves 4.
