- 4 Portobella mushroom caps
- 1 medium Onion
- 1 Leek
- 1 Yellow Squash
- 4 clove chopped garlic
- 6 Roma tomatoes
- 2 tbsp Fresh Basil
- 1/2 cup Fresh grated parmesan
- 1 tbsp Parsley
- 1/2 Lemon
Directions

1preheat oven to 400

2Chop all ingredients other than portobella

3Saute onions in olive oil til they start turning brown

4Add leeks, squash, and garlic and saute 5 minutes.

5Add tomatoes saute another 2 minutes.

6Add basil, stir ingredients, and squeeze lemon over mixture.

7Saute another 2 minutes.

8Optional: add salt, pepper, and/or a bit of sugar to mixture

9Spoon mixture into mushrooms

10Bake on 400 for 10 minutes.

11Top off with cheese, sprinkle with parsley, and return to oven for 5 min or until cheese melts/ turns brown
