Ingredients

  • 2 c. chopped onion
  • 3 cloves garlic, minced
  • 6 Tbsp. oil
  • 1 lb. garlic flavored smoked pork sausage, cut into bite size pieces
  • 10 c. beef stock
  • 1 (No. 303) can kidney beans, not drained
  • 1 head cabbage, cored and cut into medium size pieces
  • 10 small new potatoes, scrubbed and quartered
  • 1/4 c. vinegar
  • 1 (16 oz.) ketchup
  • salt and pepper (sparingly)

Directions

    Saute onion and garlic in oil just until transparent. Add sausage and brown lightly. Add beef stock and all other ingredients.

    Bring to a boil, stirring often. Reduce heat. Simmer for 45 minutes or more, stirring occasionally.

    Makes 1 gallon plus.
