Ingredients
- 2 lb. squash (mix varieties, zucchini, crookneck and patty pan)
- 2 eggs
- 1 c. low-fat mayonnaise
- 1 Tbsp. minced onion (or 1 small onion chopped fine)
- 1/4 c. chopped green pepper (optional)
- 1/4 tsp. thyme
- 3/4 c. (3 oz.) grated Parmesan cheese
- salt and pepper to taste
Directions

1Cut squash into chunks and steam until tender.

2Drain well and set aside.

3Beat eggs and blend in mayonnaise; add seasonings. Place squash in 2 1/2-quart casserole and pour mix over.

4Put Parmesan cheese evenly on top.

5Bake, uncovered, at 375°

6for 25 minutes, or 35 minutes if cold.

7Serves 8 to 10.
