Ingredients

  • 5 pounds Pork Roast, Most Of Fat Removed And Cubed
  • 1/4 cups Cooking Oil
  • 1 cup Yellow Onion, Finely Chopped
  • 4 cloves Garlic, Finely Diced
  • 3 Tablespoons All-purpose Flour
  • 6 quarts Water
  • 1 container Bueno Frozen Red Chile (14oz)
  • 1 package Bueno Posole (32oz)
  • 2 cubes Knorr Chicken Flavored Bouillon
  • 1-1/2 teaspoon Ground Cumin
  • 1 Tablespoon Oregano, Crushed
  • Sea Salt And Black Pepper To Taste

Directions

    You will need a large stock pot (12 quarts or so).

    Pour cooking oil into pot and heat, then add pork meat. Cook on medium-high heat until browned. Add onion and garlic and cook for another 3 to 4 minutes. Sprinkle flour over meat mixture and stir until browned.

    Add water, red chile, posole, bouillon, cumin, oregano, salt and pepper and stir until combined.

    Bring to a boil, then turn the heat down to a simmer and cook for 3 hours, stirring it every now and then.

    Serve with these garnishes:

    Lime or lemon wedges, squeezed into stew
