Ingredients

  • 22 Ritz crackers, crushed
  • 1 c. sugar
  • 1 c. chopped pecans
  • 3 egg whites
  • 1 tsp. vanilla
  • 8 oz. heavy cream, whipped (for top)

Directions

    Add 1/2 cup sugar and all chopped nuts to crushed crackers. Mix well and set aside.

    Beat egg whites until stiff, but not dry. Add remaining 1/2 cup sugar and vanilla gradually and beat until peaks will hold.

    Fold the 2 mixtures together carefully; turn into greased baking dish (or 9-inch pie plate).

    Bake at 350° for about 25 minutes.

    When cool, top with whipped cream (and coconut, if desired) and chill.
