Ingredients
- 2 or 3 lb. roast
- 1 onion, sliced
- 1/2 c. red wine
- 1/2 tsp. salt
- 1/2 c. flour
- dash of each: pepper, basil and thyme
Directions

1Mix flour, salt, pepper, basil and thyme.

2Cover bottom of large pot with vegetable oil.

3Coat all sides of roast with flour mixture.

4Brown in oil.

5Place onion slices underneath the roast. Add 1 cup water and wine; pour over top of roast.

6Bring to boil and reduce heat to low.

7Place tight lid on pot and cook until tender.

8Slice when cooked and place in casserole dish.

9Pour gravy over meat.

10Heat in oven next day.
