Pot Roast With Cranberries

Ingredients
- 1 (3 lb.) pot roast
- flour
- 2 Tbsp. fat or oil
- 3 c. boiling water
- 2 c. raw cranberries
- 1/2 c. diced onions
- 1/2 c. diced celery
- 1 large bay leaf
- 6 sprigs parsley
- 2 whole cloves
- 6 peppercorns
- 1 1/2 tsp. salt
Directions

1Sprinkle meat with a little flour.

2Brown on all sides in the fat.

3Add water, cranberries (picked over then washed) and all other ingredients except the salt.

4Cover and bring to boiling point, then simmer very gently until the meat is tender.

5When 1/2 done, turn meat over and add salt.

6Total cooking time: approximately 2 1/2 hours.

7If necessary, thicken gravy with additional flour.
