- 1 (1 1/2 to 2 lb.) beef top round roast (trimmed of all visible fat)
- 12 tiny potatoes or 10 medium potatoes
- 1 1/2 c. vegetable juice cocktail
- 2 Tbsp. Worcestershire sauce
- 1 tsp. dried basil
- 24 baby carrots
- 8 tiny boiling onions or 2 small onions (quartered)
- 3 stalks celery, cut in 1-inch pieces

1Preheat oven to 325°.

2Peel a strip around tiny potatoes. If using medium potatoes, cut in chunks.

3Lightly spray an unheated Dutch oven with no-stick spray.

4Add the meat and brown. Drain drippings from pan.
