Potato And Cauliflower Gratin

  • 500 g potatoes
  • 1 None large cauliflower, cut into florets
  • 30 g butter, plus extra to grease
  • 1 None onion, diced
  • 30 g plain flour
  • 100 ml milk
  • 3-4 tsp Dijon mustard
  • Pinch None caster sugar
  • Pinch None grated nutmeg
  • 25 g tortilla chips

Directions

    Cook the potatoes in salted, boiling water for 20-25 mins, until tender then drain. Meanwhile, cook the cauliflower in a separate pan of boiling, salted water for 6-8 mins until tender then drain. And reserve the cooking liquid.

    Run the potatoes under cold water until cool enough to handle then peel and slice in half, if large.

    Melt the butter in a saucepan, add the onion and saute for 4-5 mins over a low-medium heat until soft. Sift in the flour and saute for 1-2 mins. Gradually stir in the milk and gently heat until the sauce thickens. Mix in the mustard, sugar, nutmeg and half the cheese.

    Grease a baking dish then arrange the cauliflower and potatoes inside. Pour over the sauce then sprinkle with the remaining cheese. Bake for 25-30 mins then add the tortilla chips to the dish. Serve.
