- 5 to 6 medium potatoes
- 1 medium onion, finely minced
- 2 cans chopped olives
- 2 eggs
- dash of onion and garlic salt
- cracker meal
Directions

1Cook and mash potatoes.

2Add onion, olives, 1 egg and seasonings.

3Let mixture cool.

4Form balls into about a half dollar size.

5Dip balls into remaining egg that has been beaten, and roll in cracker meal.

6Refrigerate overnight.

7When ready to serve, fry in 3/4-inch of very hot oil.

8Serve hot with tartar sauce.
