  • 2 1/2 c. potatoes, cubed
  • 1/2 c. chopped onion
  • 2 sprigs chopped parsley (optional)
  • 2 celery tops
  • 2 1/2 c. water
  • 1 1/2 Tbsp. butter
  • 1 1/2 Tbsp. flour
  • 3 c. milk
  • 1 to 2 eggs, slightly beaten
  • salt and pepper
  • grated cheese

Directions

    Combine potatoes, onion, parsley, celery tops, salt and water in saucepan.

    Bring to a boil; cook gently until potatoes are tender.

    Mash, leaving some chunks.

    Make a roux with the butter, flour and milk.

    Add to stock.
