- 2 1/2 c. potatoes, cubed
- 1/2 c. chopped onion
- 2 sprigs chopped parsley (optional)
- 2 celery tops
- 2 1/2 c. water
- 1 1/2 Tbsp. butter
- 1 1/2 Tbsp. flour
- 3 c. milk
- 1 to 2 eggs, slightly beaten
- salt and pepper
- grated cheese
Directions

1Combine potatoes, onion, parsley, celery tops, salt and water in saucepan.

2Bring to a boil; cook gently until potatoes are tender.

3Mash, leaving some chunks.

4Make a roux with the butter, flour and milk.

5Add to stock.
