- 1 1/2 c. all-purpose flour
- 2 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 6 Tbsp. butter or margarine (room temperature)
- 1 1/2 c. mashed potatoes, chilled
- 4 scallions
Directions

1Preheat oven to 425°.

2Lightly grease baking sheet; set aside. In large bowl combine flour, baking powder, salt and pepper.

3With pastry blender cut butter until coarse crumbs.

4Stir in mashed potatoes and scallions to make a soft dough.

5On lightly floured surface knead dough 3 to 4 minutes.

6With rolling pin, on lightly floured surface, roll dough 1/4-inch thick.

7With 3 1/2-inch round cookie cutter, cut into rounds.

8With spatula, transfer to prepared baking sheet.

9Bake 25 minutes until golden brown.

10Cool on wire rack 5 minutes.

11Serve warm.
