  • 2 c. sugar
  • 1 c. butter
  • 4 eggs
  • 1 c. mashed potatoes
  • 1/2 c. cocoa
  • 1 c. pecans
  • 2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 1/2 tsp. nutmeg

Directions

    Cream butter and sugar.

    Add eggs, one at a time.

    Add mashed potatoes to egg mixture.
  4. 4
    Add cocoa to flour and baking powder. Add cinnamon, allspice and nutmeg, then combine dry ingredients with egg mixture.

    Bake in tube pan at 350° until done or about an hour.

    Test for doneness.
