  • 5 med. potatoes, grated
  • 2 Tbsp. flour
  • 5 Tbsp. shredded cheddar cheese
  • 2 eggs, beaten
  • 1/2 tsp. salt
  • 1/2 med. onion, diced finely
  • 1/2 tsp. salt
  • 1/2 oil

Directions

    Combine all ingredients in mixing bowl, except oil.

    Mix well.

    Drain any liquid that accumulates.

    Pour oil in skillet to 1/8 inch deep.

    Heat to 350°.

    Drop potato mixture, 1/4 c. at time, into hot oil.

    Flatten, forming a circle.

    Cook 3 minutes on each side or until potatoes are brown.

    Makes 8 to 10 servings.
