- 5 med. potatoes, grated
- 2 Tbsp. flour
- 5 Tbsp. shredded cheddar cheese
- 2 eggs, beaten
- 1/2 tsp. salt
- 1/2 med. onion, diced finely
- 1/2 tsp. salt
- 1/2 oil
Directions

1Combine all ingredients in mixing bowl, except oil.

2Mix well.

3Drain any liquid that accumulates.

4Pour oil in skillet to 1/8 inch deep.

5Heat to 350°.

6Drop potato mixture, 1/4 c. at time, into hot oil.

7Flatten, forming a circle.

8Cook 3 minutes on each side or until potatoes are brown.

9Makes 8 to 10 servings.
