  • 200 grams leftover mashed potato
  • 1/3 leek
  • 1 small onion
  • 1 small clove of garlic
  • 1 tbsp flour
  • 1 salt and pepper to taste
  • 1 oil for frying

Directions

    dice the onion, crush the garlic and shred the leek.

    saute the onion and leek for a few minutes without browning.

    add the garlic and remove from heat
  4. 4
    in a mixing bowl combine all the ingredients together
  5. 5
    heat the oil on a high heat.

    divide the mash mix into 4 balls.

    place in pan and fry until brown then flip over carefully and repeat.

    takes about 5 minutes each side

    I served with beans, scrambled eggs and toast with a big dollop of brown sauce.

    as I was extra hungry I had 3 while my daughter had just the one :)
