  • 2 small baked potatoes (cooled)
  • 1 1/2 to 2 boxes confectioners sugar
  • 1 tsp. vanilla
  • crunchy peanut butter

Directions

    Peel potatoes; mash in large mixing bowl.

    Add sugar and vanilla gradually until mixture is consistency of dough.

    Roll out on wax paper.

    Spread generously with peanut butter.

    Roll into a log chill several hours or overnight.
  6. 6
    Slice and serve.
