  • 3 large potatoes, peeled and finely grated
  • 5 large carrots, peeled and coarsely grated
  • 2 large onions, peeled and coarsely grated
  • 6 eggs, beaten
  • 1/4 c. vegetable oil
  • 3/4 c. matzoh meal
  • salt and pepper to taste

Directions

    Toss together the potatoes, carrots and onions. Stir the eggs and oil; add to vegetables. Blend in the matzoh meal.

    Pour into well-greased 3-quart casserole or loaf pan. Bake 1 hour at 350°. Makes 8 to 10 servings.
