Ingredients

  • 6 medium white potatoes
  • 2 c. shredded cheddar cheese
  • 1/4 c. margarine
  • 1 1/2 c. sour cream
  • 1/3 c. chopped green onions
  • 1 tsp. salt
  • 1/4 tsp. pepper

Directions

    Boil potatoes in jackets until tender.

    Cool, peel, and grate.

    In large saucepan, combine cheese and margarine over low heat.

    Stir until almost melted.

    Blend in sour cream, onions, salt and pepper.

    Fold in grated potatoes; turn into casserole dish which has been sprayed with a non-stick cooking spray.

    Dot top with margarine.

    May top with extra shredded cheese if desired.

    Bake at 325° for 25 minutes.

    Yield: 6 to 8 servings.
