- 6 medium white potatoes
- 2 c. shredded cheddar cheese
- 1/4 c. margarine
- 1 1/2 c. sour cream
- 1/3 c. chopped green onions
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Boil potatoes in jackets until tender.

2Cool, peel, and grate.

3In large saucepan, combine cheese and margarine over low heat.

4Stir until almost melted.

5Blend in sour cream, onions, salt and pepper.

6Fold in grated potatoes; turn into casserole dish which has been sprayed with a non-stick cooking spray.

7Dot top with margarine.

8May top with extra shredded cheese if desired.

9Bake at 325° for 25 minutes.

10Yield: 6 to 8 servings.
