  • 2 c. shredded Cheddar cheese
  • 1/4 c. butter
  • 1 (16 oz.) sour cream
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 6 medium potatoes, cooked, peeled and coarsely shredded
  • 2 Tbsp. margarine

Directions

    Combine cheese and 1/4 cup butter in pan.

    Stir over low heat until cheese melts.

    Remove from heat and stir in sour cream, onion, salt and pepper.

    Add potatoes, mixing gently.

    Pour into a buttered 2-quart dish or pan.

    Dot with remaining butter and bake at 350° for 30 minutes.
