Potato Casserole

Ingredients

  • 1 (2 lb.) bag frozen shredded potatoes
  • 1 1/2 sticks butter or oleo
  • 1 (8 oz.) container sour cream
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 1 large pkg. grated cheese (I mix American and Cheddar)
  • 1 medium onion, grated
  • 2 c. Ritz crackers, crushed

Directions

    Thaw potatoes in a large, oblong Pyrex dish.

    Mix all ingredients, except Ritz crackers, and pour over potatoes.

    Stir lightly.

    Melt 1 stick oleo or butter and mix with Ritz crackers. Place this on top of potato mixture.

    I also add some extra cheese to the top.

    Bake in a 350° oven for about 45 minutes.

    This will serve about 12 people.
