Potato Cheese Soup

Ingredients
- 1/4 c. butter
- 1 onion, chopped
- 3 stalks celery, chopped
- 5 medium potatoes, peeled and sliced
- 2 cubes or 2 Tbsp. granulated chicken bouillon
- 1 pt. half and half
- 1/4 to 1/2 c. instant mashed potatoes
- 2 c. grated Cheddar cheese
Directions

1Saute onion and celery until tender in the butter.

2Add potatoes and bouillon.

3Cover with water just to cover potatoes; boil until potatoes are tender.

4Put 2/3 of mixture into blender and puree until smooth.

5Return to pot and add half and half.

6Add instant mashed potatoes to thicken.

7Serve cheese on side.
