Potato Cheese Soup

Ingredients

  • 1/4 c. butter
  • 1 onion, chopped
  • 3 stalks celery, chopped
  • 5 medium potatoes, peeled and sliced
  • 2 cubes or 2 Tbsp. granulated chicken bouillon
  • 1 pt. half and half
  • 1/4 to 1/2 c. instant mashed potatoes
  • 2 c. grated Cheddar cheese

Directions

    Saute onion and celery until tender in the butter.

    Add potatoes and bouillon.

    Cover with water just to cover potatoes; boil until potatoes are tender.

    Put 2/3 of mixture into blender and puree until smooth.

    Return to pot and add half and half.

    Add instant mashed potatoes to thicken.

    Serve cheese on side.
