Potato & Chive Egg Bake

  • 2 tablespoons Land O Lakes Butter
  • 6 medium (2 cups) new red potatoes, unpeeled, cut into 1/2-inch pieces
  • 1 small (1/2 cup) onion, coarsely chopped
  • 1 teaspoon finely chopped fresh garlic
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded Asiago cheese blend
  • 1/2 cup coarsely chopped roasted red pepper
  • 2 tablespoons chopped fresh chives
  • 10 Land O Lakes Eggs
  • 1/2 cup Land O Lakes Half & Half

    Heat oven to 325F.

    Spray 8-inch square glass baking pan with no-stick cooking spray; set aside.

    Melt butter in 12-inch nonstick skillet until sizzling.

    Add potatoes; cook over medium heat 3 minutes.

    Add onion, garlic, salt and pepper; continue cooking 4-6 minutes or until potatoes are crisply tender.

    Stir in cheese, roasted red peppers and chives.

    Place potato mixture into prepared pan.

    Combine eggs and half & half in bowl; beat at medium speed until well mixed.

    Pour egg mixture over potatoes in pan.

    Bake 45-55 minutes or until knife inserted in center comes out clean.
