Potato Chowder

  • 2 lb. potatoes, cubed and peeled
  • 6 strips bacon, diced
  • 1/2 c. chopped onion
  • 3/4 c. chopped celery
  • 2 carrots, diced
  • 1 1/2 c. water
  • 1 bouillon cube
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. cayenne
  • 1/4 tsp. thyme
  • 3 c. milk
  • 2 Tbsp. flour
  • 2 Tbsp. soft butter

Directions

    Saute bacon and onion in large kettle.

    Add potatoes, celery, carrots, water, bouillon cube and seasonings.

    Cover and cook until vegies are tender.

    Add milk and heat through.

    Mix flour and butter.

    Add to chowder.

    Cook, stirring occasionally until slightly thick.
