Ingredients

  • 2/3 c. oil
  • 2 1/2 c. flour
  • 1 2/3 c. sugar
  • 1 1/4 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 1/4 c. mashed ripe banana
  • 2/3 c. buttermilk (buttermilk substitute, 1/2 c. milk plus vinegar to make 2/3 c.)
  • 2 eggs
  • pecans or walnuts to taste (if desired)

Directions

    Mix all wet ingredients.

    Sift together dry ingredients and add to batter.

    Stir well.

    Line 2 loaf pans with wax paper; spray ends with nonstick spray.

    Bake at 350° for 35 minutes or until toothpick comes out clean.

    While still warm, pour over top glaze (powdered sugar and warm water).
