- 2 lb. potatoes
- 6 strips bacon, diced
- 1/2 c. chopped onion
- 3/4 c. diced celery
- 2 carrots, diced
- 1 1/2 c. water
- 1 bouillon cube
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. cayenne
- 1/4 tsp. thyme
- 3 c. milk
- 2 Tbsp. flour
- 2 Tbsp. soft butter
Directions

1Peel and dice potatoes.

2Saute bacon with onion in large kettle.

3Add potatoes, celery, carrots, water, bouillon and seasonings.

4Cover and cook gently until vegetables are tender. Add milk and heat through.

5Combine flour and butter.

6Add to chowder.

7Cook, stirring occasionally, until chowder thickens.
