- 3 medium potatoes
- 2 c. frozen mixed vegetables
- 2 beaten eggs
- 1/4 tsp. salt
- 1 Tbsp. fine dry bread crumbs or wheat germ
- 1/4 c. butter
- 1/2 c. shredded Cheddar cheese
- 1 (5 oz.) can evaporated milk
- 1/8 tsp. pepper
Directions

1Cook potatoes, covered, in boiling salted water until tender. Drain and mash.

2Stir in butter and spoon into a greased 9-inch pie plate.

3Spread over bottom and up sides, building up sides with a spoon to form a crust.

4Arrange vegetables in bottom of potato crust.

5Sprinkle with cheese.

6In a small bowl, combine eggs, milk, salt and pepper.

7Pour over cheese and sprinkle with bread crumbs or wheat germ.

8Bake at 375° for 40 to 50 minutes.
