  • 4 large size potatoes
  • 2 medium onions, chopped
  • 2 hot green peppers (finger), cut into pieces
  • 1 tsp. mustard seed
  • 2 tsp. urad dhal
  • 2 Tbsp. vegetable oil
  • 1 tsp. turmeric powder
  • salt to taste
  • 1 tomato, cut into small pieces

Directions

    Cut potatoes into halves; boil them for 15 minutes, or pressure cook (do not overcook).

    Remove skin from potatoes.

    Cut into small (1/3-inch) pieces.

    Heat oil in frying pan.

    Put mustard seed and urad dhal in oil.

    Fry urad dhal until brown (30 seconds).

    Brown cut onions.

    Add green peppers, tomatoes and potatoes.

    Add turmeric powder and salt to taste.

    Stir entire ingredients; simmer for 2 minutes.
