Ingredients
- 4 large size potatoes
- 2 medium onions, chopped
- 2 hot green peppers (finger), cut into pieces
- 1 tsp. mustard seed
- 2 tsp. urad dhal
- 2 Tbsp. vegetable oil
- 1 tsp. turmeric powder
- salt to taste
- 1 tomato, cut into small pieces
Directions

1Cut potatoes into halves; boil them for 15 minutes, or pressure cook (do not overcook).

2Remove skin from potatoes.

3Cut into small (1/3-inch) pieces.

4Heat oil in frying pan.

5Put mustard seed and urad dhal in oil.

6Fry urad dhal until brown (30 seconds).

7Brown cut onions.

8Add green peppers, tomatoes and potatoes.

9Add turmeric powder and salt to taste.

10Stir entire ingredients; simmer for 2 minutes.

11Ready to serve.
