  • 1 medium potato
  • 2 Tbsp. butter
  • 3/4 c. sugar
  • 1/8 tsp. salt
  • 2 eggs, separated
  • 1/2 c. milk
  • juice and grated rind of 1/2 lemon
  • plain pie pastry

    Boil potato.

    Mash.

    Add butter, sugar and salt; stir to creamy consistency.

    Cool.

    Add beaten egg yolks, milk, lemon juice and rind.

    Mix well together.

    Fold in stiffly beaten egg whites.

    Pour into pastry shell.
