- 1 lb potato
- 4 cloves garlic
- 12-34 cup tahini
- 13 cup fresh lemon juice
- 14 cup olive oil
- 23 cup water, appr.
- 12 teaspoon ground cumin
- 14 teaspoon cayenne pepper
- 1 teaspoon salt, to taste
- fresh ground black pepper
Directions

1Peel and cut the potatoes into cubes.

2Boil potatoes until tender, appr 15 minutes.

3Drain thoroughly and pass through a ricer or food mill into a bowl.

4Add the tahini, lemon juice and oil and blend thoroughly.

5Gradually stir in the water until the mixture is the proper consistency for dipping.

6Add the cumin and cayenne, then season with salt and pepper.
