  • 4 medium size potatoes
  • 2 eggs
  • 3/4 c. flour
  • 1 heaping tsp. baking powder
  • 1 heaping tsp. salt
  • 1/4 lb. melted butter or shortening

Directions

    Grate the potatoes and drain off the water.

    Add the other ingredients, mixing well.

    Grease a pudding dish and heat it. Then pour in mixture and bake until brown with firm crust (about 3/4 hour) in a medium 375° oven.

    Makes 4 generous servings and should be served hot.
